Rice and Shine: Rice Pudding

2 cups rice
2 cups milk
1 cup cream
1 tsp vanilla
1/3 cup sugar
1/4 tsp salt
1/4 tsp cinnamon
1/4 Tbs cornstarch
1 1/2 Tbs water
6 egg yolks

Whisk 2 cups milk, 1 cup cream, 1 tsp vanilla, 1/3 cup sugar and 1/4 tsp salt in medium saucepan over medium heat. Simmer

Combine 1/4 tsp cinnamon, 1 Tbs cornstarch and 1 1/2 Tbs water, whisk into saucepan

In medium bowl, beat 6 yolks. Slowly whisk half the milk mixture into egg. Lower heat to medium-low and return egg and milk mixture to pot, whisking constantly

When mixture thickens (about 5 min.) add 2 cups rice. Stir until rice is warmed through (3 to 5 min.)

Pour pudding into serving dish or individual custard cups. Chill in refrigerator for 1 hour min. Garnish with cinnamon or brown sugar
